Seared local fish, caramelised miso eggplant, pickled purple cauliflower, tempura enoki, crispy seaweed, umeboshu sour plum, sake glaze
SEAFOOD SAMBAL
Chilli hot and spicy curry of local King prawn, squid, pippies and fish. With lotus leaf wrapped rice and a jackfruit, mint, cucumber and yoghurt salad
CHARGRILLED PASTURE FED EYE FILLET STEAK
Smoked paprika ghee, whipped Cudgen sweet potato, smoking leek salad, fat cassava chips, red wine braised mushrooms, beetroot blood
SEARED SCALLOPS
Edamame puree, spiced Cudgen corn kernels, smoked tomato, yuzu dressing, wakame and black sesame
TWICE COOKED DUCK BREAST
Glasshouse Mountain duck, savoury rhubarb, liquorice rice cake, asparagus, pinot noir, native mountain pepper
