After many requests from our much loved customers we now have a new range of products. FINS products are handmade using local organic Byron Bay produce and contain no preservatives or artificial ingredients.

FINS Mild Chilli Capsicum Jam

The same jam we serve with our baked bread. Great for enlivening the palate before serious (or not so serious) dining. Think sweet, salty, citrus, fresh herb and exotic.

Great as a pizza base, salacious in salad dressings and a brilliant accompaniment to seafood, all meats and vegetables. Try it with cheese and crackers or on its own as a dip.

FINS Lisbon paste

Learnt from a Portuguese grandma.  Add a level of authenticity to your Mediterranean cooking by frying Lisbon paste with onions and garlic before adding meats or vegetables.

Marvelous marinade for beef, fish, chicken, vegetables or tofu before baking or frying. Add a splash of olive oil or wine for a brilliant barbeque marinade.

Aged in American oak using organic local ingredients. Every bottle is flavoured with Lemon Myrtle from my farm. Think Byron Bay Tabasco with a twist... Chef Steven Snow feels it's only fair to warn that consumption of this sauce can be addictive...

Organic Feral Preserved Tangelos & Lemons
Feral and organic citrus from my farm. Just a small amount will add a tangy and exotic flavour in savoury fried rice. Cook with duck or pork for a difference. Desserts are infinitely innovative with this versatile preserved citrus.
